The viral Mini Egg crunch cake everyone's talking about on TikTok and social media

The Mini Egg crunch cake – a chocolate cake base topped with layers of chocolate ganache, chocolate-coated cornflakes and Mini Eggs – is the latest viral dessert to blow up on TikTok and quickly spread to Instagram, Facebook and other social media.

Buzz from Shooglebox has been tracking the Mini Egg crunch cake from the original viral video that kicked off the trend to the hundreds of people and dessert shops now making and selling their own versions.

How the Mini Egg crunch cake trend started

TikTok creator Ruby Barney Britton came up with the idea for the cake and has inspired hundreds of people to make their own versions. This TikTok she posted got more than three million views with comments like:

• "This is disgusting….ly good. Give me the recipe 🔥"

• "Oh I just know this SLAPPED"

• "That’s my type of cake"

• "Gimme twenny of em right NAAAOOOOWWWWW 😍🤤"

• "You honestly deserve something amazing idk what"

Ruby went on to share the full recipe for the crunch cake in this video.

"The BEST cake I've ever had"

Influencer Chloe Nicola was quick to make her own version of the cake after seeing Ruby's videos. She was blown away by the recipe, describing it as "the nicest chocolate cake I've ever had in my entire life."

Grace Booth made the cake as a dessert for when her friends came over for the evening. She said "I don't think I have a bad word to say about it" and asked "Why didn't I make this Mini Egg crunch cake sooner?"

And just this week the cake got the seal of approval from Ash Baber – one of the biggest baking influencers in the UK with three million followers across his social media channels. He jokes that he's been "tormented" by videos of the crunch cake all over his feeds: "Everywhere I look, someone is either eating it, making it, buying it, or selling it. It's everywhere. I don't like when there's a new phenomenon and I'm not involved."

After making it, Ash said he understands why the cake's a hit: "I can see why this cake has become so famous. It's very easy to make, and it tasted so delectable too. It was chocolatey, crunchy and the cake was so soft. This trend gets an approval from me."

Cheat versions of the Mini Egg crunch cake

Some people who aren't experienced bakers are making "cheat" versions with supermarket chocolate cakes, Swiss rolls or muffins as the base – rather than having to make a cake entirely from scratch.

A five-ingredient "lazy girl recipe" posted by @food.with.nae uses mini chocolate muffins which she crumbles and flattens into a dish before adding the usual toppings.

This recipe mixed a double chocolate Swiss roll with chocolate custard.

Other people like @learnwithlena recommend using a box mix – she bought one of the Betty Crocker Devil's Food cake mix boxes and only had to add oil, eggs and milk to make the cake batter.

The "crunch cake pandemic"

One TikToker jokes about there being a "crunch cake pandemic" in the UK because of all the bakeries and dessert shops that are now selling their own versions of the Mini Egg crunch cake.

Birmingham-based Peony Bakes got a million views on a TikTok they posted showing the Mini Egg crunch cake they're selling.

Sip & Petals coffee and flower bar in London say the cake is their current "bestseller" and selling out every day.

Dhillon's Desserts in County Durham say "Easter wouldn't be complete" without them launching their own version of the cake – which they sell for £11.99 on TikTok Shop.

Other crunch cake flavours and toppings

The original Mini Egg crunch cake is also being adapted with other flavours and toppings from Biscoff and pistachio to Maltesers and Milkybar.

Ruby who went viral with the original Mini Egg crunch cake recipe also came up with the idea of for a Jammy Dodger crunch cake – a vanilla sponge topped with white chocolate ganache, strawberry jam, white chocolate coated cornflakes, chopped-up Jammy Dodger biscuits and Milkybar Mini Eggs. She thinks this version would be "perfect for all the white chocolate lovers".
